The history of the Rosa Salva family begins around 1870, when Andrea Rosa anticipates the times: he makes his kitchen mobile and organizes 'home lunches' in Venetian palaces and villas in the surrounding area. Intuition, happily forerunner of the times, is successful. Andrea is increasingly called even outside the city, to the Venetian villas that dot the Brenta river and which he, starting at dawn, reaches on a horse-drawn river barge.

We are in 1879 and Antonio Rosa known as Salva, who inherited the “traveling trattoria” from his father, becomes a royal chef. Awards and accolades make him famous for his cooking services and above all as a refined pastry chef.
