Training, passion and curiosity in the kitchen can happily implement the results of the comparison between different techniques and traditions as well as the openness and attention to the history of food of the communities of the world, with particular attention to the East and Japan, where I go frequently. A journey undertaken that led me to a multidisciplinary vision of eating which, in its proposals, has become increasingly conditioned by the research on the biodiversity of the territories to the discovery, above all, of obsolete plants capable of telling the value of the original productions and of providing authentically genuine raw materials.

Hence the enthusiasm for the energetic value of color which, in the favorite use of spontaneous aromatic and wild mixed vegetables, of berries and flowers, presents a food that through all senses places man and the environment in ecological harmony.
