San Daniele of Friuli


The Municipality of San Daniele, perched on the top of a hill at 252 m a.s.l., is in the center of Friuli Venezia Giulia and dominates the surrounding plain. The territory enjoys a particular air that gives the hams (locally produced) a unique and unmistakable flavor known all over the world.

Not far from the hill, the clear waters of the Tagliamento are the natural home of the trout (here called "the queen of San Daniele") which is reared and processed in an artisanal way. The city can boast its proximity to the Adriatic Sea in the south and Carnia in the north.

San Daniele was in contact with San Daniele in Carinthia (Sankt Daniel im Gailtal) connected with the history of the Patriarchate of Aquileia and with San Daniele del Carso (Monte San Daniele) in Slovenia (Stanjel na Krasu) by common original history.

A cozy and welcoming city with various artistic treasures, it is part of the Slow Cities.

The specialty is the Prosciutto di San Daniele (PDO) which is a cured cured ham recognized as having been produced with a Denomination of Origin since 1970 by the Italian State with law no. 507 and since 1996 by the European Union as a product with a protected designation of origin (PDO) because its characteristics are due to the particular geographical environment, which includes natural and human factors.

It is produced by 31 companies in the municipality of San Daniele del Friuli, in the province of Udine according to methods defined by the relative production regulations which have the force of law. The brand of the Consortium, which includes the identification code of the producer, is branded on certified hams.

The Consortium was established in 1961 by some citizens of San Daniele and by all the producers of San Daniele ham of the time with the aim of protecting the brand and establishing rules that were mandatory and equal for all producers.

The producers established a series of rules concerning the essential elements of the production of the ham: the origin of the pigs; the place of maturation; the stages of processing; the minimum duration of maturation; the organoleptic characteristics.

Each taste is an experience of goodness and delicacy.
